This silky, rich chicken alfredo recipe is made with homemade alfredo sauce and has juicy, properly cooked chicken.
Ingredients
12 oz Fettuccine noodles, uncooked
For the Chicken
1 lb boneless skinless chicken breasts
½ tsp salt
¼ tsp black pepper
½ tsp paprika
1 tsp Italian seasoning
2 tsp olive oil
For the Alfredo Sauce
½ cup butter, salted
3 cloves garlic, minced
8 oz cream cheese
1½ cups heavy cream
8 oz parmesan cheese, shredded
¼ tsp salt
¼ tsp black pepper
1 tbsp parsley, freshly chopped
Instructions
In a sizable pot of salted water, cook pasta as directed on the package. When the pasta is done, drain it while saving 1 cup of the cooking water.
As for the Chicken
Use a rolling pin or a big saucepan to pound chicken breasts into an equal thickness while you wait. Italian spice, paprika, salt, and pepper should be used to season both sides.
The olive oil is added to a big skillet that is already hot over medium-high heat. Cook chicken for 3 to 5 minutes on each side, or until it is thoroughly done (165 degrees F). Take the chicken out of the pan and set it aside for at least five minutes on a platter, lightly covered with foil.
The Alfredo Sauce, please
Reduce heat to medium, add the butter, and cook the chicken in the same skillet. Add the minced garlic when the butter has melted, and simmer for 30 seconds or so, until fragrant.
When the cream cheese is mostly melted into the butter, add it in and stir briefly. It’s typical for the mixture to appear a little clumpy, like cottage cheese.
Pour the heavy cream in little amounts while stirring the mixture until it is smooth. The parmesan cheese should be added and heated through while stirring.
The cooked fettuccine noodles should be added to the sauce and coated. If more moisture is required, add it to the pasta and sauce with the saved spaghetti sauce. Add salt and pepper to taste.
Over the noodles, arrange the strips of chicken breast. Add extra freshly cracked pepper and freshly chopped parsley as garnish. Love it hot?
