For the coconut filling:
Shredded coconut
Sweetened condensed milk

For the chocolate coating:
Semi-sweet or dark chocolate chips
Coconut oil (optional)
Instructions
Prepare the coconut filling:
Mix shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt in a large bowl until well combined. Line a baking dish with parchment paper. Press the coconut mixture firmly and evenly into the dish. Freeze for 1-2 hours until firm.
Prepare the chocolate coating:
Melt chocolate chips (and coconut oil, if using) in a microwave or double boiler. Stir until smooth. Remove the coconut mixture from the freezer and cut it into bars or squares. Dip each piece into the melted chocolate, ensuring it’s fully coated. Place the coated bars on a parchment-lined tray. Chill in the refrigerator until the chocolate is set.
