Ingredients:
– 4 boneless, skinless chicken breasts
– 4 medium-sized potatoes, peeled and diced into 1-inch cubes
– 4 cups of your favorite greens (spinach, kale, Swiss chard, etc.)
– 1 onion, diced
– 4 cloves of garlic, minced
– 2 tablespoons olive oil
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– 1 teaspoon paprika
– Salt and pepper to taste

Instructions:

1. Preheat your oven to 400°F (200°C).

2. Season the chicken breasts with salt, pepper, and paprika on both sides.

3. Heat one tablespoon of olive oil in a large oven-safe skillet over medium heat. Add the chicken breasts and cook for about 5 minutes on each side until browned. Remove the chicken from the skillet and set aside.

4. In the same skillet, add the remaining tablespoon of olive oil. Add the diced onions and minced garlic, and cook until they become fragrant and translucent, about 2-3 minutes.

5. Add the diced potatoes, dried thyme, dried rosemary, salt, and pepper to the skillet. Stir everything together to coat the potatoes with the herbs and seasonings.

6. Place the skillet in the preheated oven and bake for 20-25 minutes or until the potatoes are tender and slightly browned.

7. Remove the skillet from the oven and stir in the greens. Return the chicken breasts to the skillet, nestling them into the potatoes and greens.

8. Place the skillet back in the oven and bake for an additional 10-15 minutes or until the chicken is cooked through and the greens have wilted.

9. Remove from the oven and let it rest for a few minutes before serving.

10. Serve the chicken, potatoes, and greens together on a plate and enjoy your delicious one-pan meal!

Feel free to adjust the seasonings and cooking times according to your taste and preferences. Enjoy!
