One-Pot Spanish Rice Casserole


  • 1 box of Rice a Roni Spanish rice
  • 1 lb lean ground beef
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • Sprinkle of shredded cheese
  • 1 can of Rotel (diced tomatoes and green chilies)
  • Salt and pepper to taste

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the Rice a Roni Spanish rice according to the instructions on the box.
  3. In a large skillet, brown the lean ground beef over medium heat.
  4. Add the chopped onions, red bell pepper, and green bell pepper. Cook until the beef is fully cooked and the vegetables are tender.
  5. Sprinkle a layer of shredded cheese over the beef and vegetable mixture in the skillet.
  6. Add the can of Rotel (including the juice) and season with salt, pepper, and cumin. Stir everything together.
  7. Combine the prepared Rice a Roni Spanish rice with the beef and vegetable mixture in the skillet. Stir well to evenly distribute the ingredients.
  8. Transfer the mixture to a baking dish and spread it out evenly.
  9. Top with an additional layer of shredded sharp cheddar cheese.
  10. Place the baking dish in the preheated oven and bake for 25 to 30 minutes, or until the cheese is melted and bubbly.
  11. Once done, remove the casserole from the oven and let it cool for a few minutes before serving.
