1 cup grated and drained zucchini
1/3 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 clove garlic, grated
2 tablespoons fresh chives, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon fresh basil, chopped
1 teaspoon fresh oregano, chopped
Pinch of salt and pepper
Tomato sauce for dipping
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Apply cooking oil to a baking sheet.
Grate the zucchini with a box grater. Place them onto a clean towel.
Wring the grated zucchini to remove most of the water.
Add all the ingredients into a medium mixing bowl. Stir until well combined.
Make small balls out of the mixture.
Arrange the balls onto a baking sheet.
Place the baking sheet inside the preheated oven and bake for about 15 minutes or until golden.
Remove from the oven and allow them to cool for a few minutes at room temperature.
Serve with marinara sauce.
