double chocolate baked oats

Ingredients:

– 1 cup rolled oats

– 1 cup milk (dairy or non-dairy)

– 1 ripe banana, mashed

– 2 tablespoons cocoa powder

– 1 teaspoon baking powder

– 1 teaspoon vanilla extract

– 2 tablespoons maple syrup or honey

– 1/4 cup chocolate chips (plus extra for topping)

– Pinch of salt

 

Instructions:

 

1. Preheat Oven:

– Preheat your oven to 350°F (175°C).

 

2. Prepare the Baking Dish:

– Grease an 8×8 inch baking dish or a similarly sized dish.

 

3. Mix Dry Ingredients:

– In a large bowl, combine the rolled oats, cocoa powder, baking powder, and salt.

 

4. Mix Wet Ingredients:

– In another bowl, mix the mashed banana, milk, vanilla extract, and maple syrup (or honey).

 

5. Combine Ingredients:

– Pour the wet ingredients into the dry ingredients and mix well.

– Stir in the chocolate chips.

 

6. Bake:

– Pour the mixture into the prepared baking dish and spread it out evenly.

– Sprinkle extra chocolate chips on top if desired.

– Bake in the preheated oven for about 25-30 minutes, or until the top is set and a toothpick inserted into the center comes out clean.

 

7. Serve:

– Let the baked oats cool for a few minutes before serving.

– Serve warm, optionally with a splash of milk or a dollop of yogurt on top.
