Homemade Banana Pudding Cake

All You Need Is:

  • 3 cups white flour
  • 2 cups granulated sugar
  • 150 grams fine sugar
  • 5 eggs (3 whole eggs + 2 egg whites)
  • 2 tablespoons pure vanilla extract
  • 15 grams baking powder
  • 1 cup milk
  • 1 packet sugar-free banana pudding mix
  • 4 medium bananas
  • Filling:
  • 1 cup whipped cream
  • 1 1/4 cups skim milk
  • Mix the whipped cream and skim milk and refrigerate for 10 minutes.

Instructions:

Step 1: Preheat oven to 350°F (175°C). Prepare three cake pans by greasing and lining them with parchment paper.

Step 2: Cream the butter and sugar together until light and fluffy. Add the egg whites, whole eggs, and vanilla extract. Beat until smooth.

Step 3: In a separate bowl, mix the dry ingredients. Add to the creamed mixture alternately with the milk and pudding mix. Mix until combined.

Step 4: Divide the batter evenly into the three pans. Bake for 30 minutes, or until a toothpick inserted comes out clean. Cool for 10 minutes before removing from pans.

Step 5: Place the first cake layer on a serving plate. Mix 1 tbsp sweetened condensed milk with 1 tbsp skim milk and brush over the layer. Add sliced bananas, then spread one-third of the filling mixture on top.

Step 6: Repeat the layering process two more times. Let the cake chill and set before serving.
