- °4 cups macaroni
- °¼ cup of butter
- °1 yellow onion, chopped
- °2 tomatoes, diced
- °1/3 cup all-purpose flour
- °4 cups lobster broth
- °Salt and pepper, to taste
- °2 cups Swiss cheese, Valbert or Gruyère
- °1 c lobster meat
- °2 cups mozzarella cheese, grated
- °2 tbsp. Italian breadcrumbs
- °1 C. sweet paprika
Cook the pasta according to the directions on the package. Drain then set aside.
In a saucepan over medium heat, melt the butter, then sauté the onion and tomatoes for 5 minutes. Adding flour and cooking for 1 min. Gradually pour in the lobster broth, stirring to avoid lumps forming. Bring to a boil to thicken the sauce. Season then set aside.
Preheat the oven to 350°F and place the rack in the middle.
In a gratin dish, combine layers of sauce, macaroni, Swiss cheese, and lobster meat. Finish with mozzarella cheese, then sprinkle with breadcrumbs and paprika.
Bake for 30 minutes, then finish cooking under the broiler to brown the cheese.
