Ingredients
For the crust and topping:
- Pinch of salt
- 1 ½ cups All-purpose flour
- ¾ cup cold and cubed Butter
- ½ cup Sugar
For the filling:
- Pinch of salt
- 2 Large eggs
- ½ cup Flour
- 1 cup Sugar
- 16 oz. Can crushed pineapple
- ½ cup Sour cream
For the icing:
- 1 tsp. Coconut extract
- 1 cup Powdered sugar
- 2 tbsp. Half and half
Instructions
- Heat the oven to 350 degrees.
- Blend together the flour and sugar for the crust mixture.
- Cut in the cold butter until the mixture is crumbly. Reserve 1 cup of this mixture for later.
- Press the remaining crust mixture into the bottom of a well-greased 9×13 baking dish.
- Bake for 15 minutes.
- Blend together the filling ingredients and spread them over the pre-baked crust in the baking dish.
- Top with the reserved crust mixture crumbled.
- Bake for 1 hour.
- Let cool for 15-20 minutes.
- Beat together the icing ingredients until smooth.
- Drizzle the icing over the bars, adding more half and half if needed to thin the icing.
- Slice and serve.
