PINEAPPLE CAKE BARS

 

Ingredients

For the crust and topping:

  • Pinch of salt
  • 1 ½ cups All-purpose flour
  • ¾ cup cold and cubed Butter
  • ½ cup Sugar

For the filling:

  • Pinch of salt
  • 2 Large eggs
  • ½ cup Flour
  • 1 cup Sugar
  • 16 oz. Can crushed pineapple
  • ½ cup Sour cream

For the icing:

  • 1 tsp. Coconut extract
  • 1 cup Powdered sugar
  • 2 tbsp. Half and half

Instructions

  1. Heat the oven to 350 degrees.
  2. Blend together the flour and sugar for the crust mixture.
  3. Cut in the cold butter until the mixture is crumbly. Reserve 1 cup of this mixture for later.
  4. Press the remaining crust mixture into the bottom of a well-greased 9×13 baking dish.
  5. Bake for 15 minutes.
  6. Blend together the filling ingredients and spread them over the pre-baked crust in the baking dish.
  7. Top with the reserved crust mixture crumbled.
  8. Bake for 1 hour.
  9. Let cool for 15-20 minutes.
  10. Beat together the icing ingredients until smooth.
  11. Drizzle the icing over the bars, adding more half and half if needed to thin the icing.
  12. Slice and serve.
