The Breakfast Casserole is perfect for when you need to feed the crowd first thing in the morning. Eggs, sausage, and hash browns are placed in a casserole dish, topped with cheese and baked until sticky golden brown.
Serve with a fresh fruit salad (or fruit kebabs for easy serving) and keep the coffee (or mimosa)! Start the day right with this delicious breakfast dish.
* Ingredients :
° 6 cups shredded hash browns
° 6 tablespoons melted butter
° 1 pound hot dogs, roasted and drained
° 2 tablespoons minced onion
° 1/2 c green or red bell pepper, diced
° 2 c shred cheddar cheese
° 4 eggs
° 1 cup half and half or heavy cream
° A few sprinkles of hot sauce, I love Frank’s Red Hot
° Salt and pepper to taste
* Preparation :
Preheaat oven 425 degrees.
Put the potatoes in a bowl, pour the melted butter over them and stir until combined.
Pour into a 9×13 dish and press to make a crust. Bake for 20-25 minutes or until potatoes are tender around edges. Take out from the oven and set aside.
Brown sausage with onions and peppers. sink.
In a medium bowl, whisk together eggs, half and half or cream, hot sauce, salt and pepper.
Sprinkle the sausage, onion, and pepper mixture over the potato skin.
Sprinkle grated cheese over the sausage.
Pour egg mixture over everything.
Reduce the heat to 400 degrees and bake 20-25 minutes, or eggs are placed in the center.
