Crispy Marinated Chicken Sauteed with Crispy Onions and Peppers – This recipe is a real treat.
I like to serve salt and pepper chicken with fried rice and a nice cold beer.
You can adjust the amount of heat in this recipe by using a milder or hotter pepper (or even replace the chili with chopped red pepper if you want mild).
Ingredients for 4 people
– Large package of diced chicken
– 11/2 cups cornmeal
– 1 tablespoon of salt
– 1 tablespoon of pepper
– 1 tablespoon of Chinese five-spice
– 1 onion finely chopped
– 3 chopped green onions
– 1 red pepper and 1 green pepper, diced into small cubes
– Two packets of Uncle Ben’s rice
– 2 cloves of finely grated garlic

1: Coat the chicken with cornmeal, salt, pepper, and Chinese five seasonings.
2: Pour 11/2 cups of oil into a deep pan and heat over medium-high heat.
Fry the chicken in two parts so that it does not become crowded. After the chicken is cooked, remove it to a paper towel-lined plate.
3: In a separate pan, fry the onion and pepper with 1 tablespoon of oil, stirring constantly, for 2 minutes over medium heat.
4: Add the scallions and garlic to the pan with the onions and peppers and fry for another minute.
5: Microwave the rice (or boil the dry rice before cooking with the chicken)
6: Add the chicken to the pan with the vegetables, mix and let the chicken heat up.
7: Put the rice on the plate and coat it with salt, pepper, chicken, and vegetables.
